A cool lunch for a hot day. This is a dish that Persians often eat to open the table. It's a lovely combination of fresh herbs, sliced feta, toasted walnuts, crisp radish and lots of fresh olive oil. You grab a bit of each, fold it up in some pita and eat it. It's so delicious and very nice if you're entertaining on a hot night.
Persian Style Sabzi Platter
Fresh herbs (parsley, dill, mint, tarragon are all good)
Sliced feta
Toasted walnuts
Washed spring onions
Chopped radishes
Good olive oil
Fresh pita
Lay everything out on a platter and drizzle olive oil over the top, with the pita on the side. Scoop up a bit of each and place inside a piece of pita.
